– 1/2 cup soy sauce – 1/4 cup vinegar (white or apple cider) – 6 garlic cloves, minced – 2 bay leave – 1 teaspoon black peppercorn – 1 tablespoon brown sugar (optional, for a touch of sweetness) – 1/4 cup water or chicken broth (to adjust sauce thickness) – 2 tablespoons oil (for searing chicken) – 1 onion, chopped (optional, adds extra depth of flavor) – 1/2 teaspoon ground black pepper – Green onions or cilantro (optional, for garnish) – Steamed white rice (for serving)
Marinate the chicken by combining the soy sauce, vinegar, peppercorns, bay leaves, and minced garlic in a big basin.
After adding the chicken pieces, marinate them for at least half an hour, or overnight for an even deeper flavor.
To sear the chicken, heat the oil in a big pot or skillet over medium heat. After taking the chicken out of the marinade, fry it until both sides are browned. Put the chicken away.
Prepare the Sauce: Using the same saucepan, sauté the onions until they become soft, if using.
