Roasted Curry Mayo Banchan

With Seora in our lives, we frequently feel tired and crave donuts or savory foods such as steak and pasta.

However, we all understand the importance of eating a well-balanced diet. Katie enjoys repeating the refrain, "fiber... we need more fiber," after seeing a Netflix film about gut health.  

This is an excellent method for enjoying roasted vegetables at home without using a grill.  

All you need is a hot frying pan and a few droplets of oil to sear the vegetables until they're crispy.  

We blend Korean curry powder (Ottogi brand) with equal portions mayonnaise (Kewpie brand).  

A few additional seasonings, like as vinegar and soy sauce, result in a fantastic zingy and zesty sauce.  

In fact, we've been eating it many times a week for the past few months. I believe the entire family will enjoy it.  

This meal is a banchan (Korean side dish), which means it should be served alongside a bowl of hot rice rather than on its own.
