Blueberry Almond Chia Pudding

Try this so-easy chia pudding recipe to vary your morning oatmeal regimen. 

Made exactly like overnight oats, mix chia with your preferred milk, let soak overnight, then top with crisp almonds and luscious blueberries and eat!

– ½ cup unsweetened almond milk or other nondairy milk beverage – 2 tablespoons chia seed – 2 teaspoons pure maple syrup

Ingredients

– ⅛ teaspoon almond extract – ½ cup fresh blueberries, divided – 1 tablespoon toasted slivered almonds, divided

In a small bowl, stir almond milk (or another nondairy milk beverage), chia, maple syrup and almond essence. 

Instructions

Cover and chill for at least eight hours—up to three days.

Just before serving, thoroughly stir the pudding. Spoon half the pudding into a serving glass (or bowl) then top with half the blueberries and almonds. 

Add the remaining pudding then top with almonds and blueberries.
