This is the idea of summer in a bowl. In addition to a fresh peach and cucumber salad, we would like to have spicy prawns which have all the delightful spice, smoke, and sweetness that we may fancy.
Ingredients
Spicy Shrimp
- 1 lb. shrimp
- 1 teaspoon smoked paprika
- 1 teaspoon curry powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon coarse sea salt (start here, add more as necessary)
- 1/8 to 1/4 teaspoon cayenne pepper (add to taste – it’ll make it spicy!)
- 1 tablespoon butter
- a drizzle of honey (to taste – 1 tsp to 1 tablespoon)
Peach Salad
- 2 peaches, pitted and sliced (about 2 cups)
- half an English cucumber, thinly sliced (about 1 cup)
- half a shallot, thinly sliced (about 1/4 cup)
- 2–3 teaspoons olive oil
- 1 lime, juiced and zested (about 1 tablespoon juice, 1 teaspoon zest)
- salt and pepper to taste
- mint leaves (about 2 packed tablespoons)
- 2–3 teaspoons honey to finish (I like hot honey!)
- 1 avocado, cubed (optional)
Instructions
- Combine all the ingredients for the peach salad, including the rice, and toss them together. Prepare anything else you might serve this with (I prefer rice).
- Shrimp seasoning can be prepared by tossing the shrimp with the available seasonings.
- Prawns should be sautéed in a hot skillet over avocado oil using medium heat. Add the prawns and cook for almost two minutes on either side until they become no longer transparent.
- For the finishing touches add a knob of butter and a drizzle of honey to the pan at the very last. Toss the prawns with the butter and honey; then use the honey to scrape off some of the browned bits from the bottom of the pan. Not only will the prawns be delicious, but they’ll be saucy and glaze, too.
- It’s Over with You! Tasty! Put prawns on top of the rice, and serve with a healthy dose of that peach salad. Yum, that is it.
Observations
- I never include the cayenne pepper until after I have removed a few prawns from the pan for my girls when preparing this recipe for my family. I will add the cayenne for my husband and me, but they just make a few that aren’t too spicy after getting started. ???? The mix of the sweet and spicy is so divine.
- There was barely enough for me, my husband, and our two small children to finish just above a couple of prawns each so this was plenty big enough to feed all of us. My recommendation, if you have four adults, would be to add more pounds of prawns and add a lot more spices.
- As much as I’d want to enjoy a scrumptious dinner with tails in it, I have concluded that it makes even more sense to remove the tails when preparing the dish. Thus I would have to start with thawing frozen shrimp first. Remove tails, mix shrimp with spices, and you’re ready to go either way!
